Caviar Dreams

Experience a tasting flight like no other in the heart of Napa, California.

A Burst of Flavor in Yountville

When one thinks of Napa, they usually think of wine. And with over 400 wineries spread across the valley, it’s easy to see why. But if you’re limiting your trip to Napa to wine tasting only, you’re missing out. There’s a new, elevated tasting experience sure to delight the senses. And that is the tasting flight of five exquisite caviars at the Regiis Ova Caviar & Champagne Lounge.

Located in the heart of Yountville, and co-founded by Chef Thomas Keller, of the famed French Laundry and Shaoching Bishop, Regiis Ova makes caviar approachable, no matter your palette.

While the menu is extensive, I opted for the tasting which includes 15 grams each of five different types of caviar. On my visit they had a rare caviar which I included for six types of caviar total.

Served in mini jars nestled in a bowl of ice, I sampled Ossetra, Hybrid, Supreme, Siberian, Ryal Caviar and Golden Ossetra. I sampled each caviar on their own atop mini bellinis, then dug in for seconds with potato chips.

I was surprised to learn that two of the caviars, Supreme and Royal were from my hometown, Sacramento. The Supreme was perfectly salty and had a nice creamy consistency; its flavor profile made even better with the addition of crème fresh. Royal was a welcomed burst of flavor, reminiscent of the sea, which I enjoyed on its own.

The three other caviars came from China. Ossetra had a nice oily base which was pleasantly briny, Hybrid was less briny and more developed in flavor while Siberian left a lot to be desired.

Of course, the real star of the show was the Golden Ossetra. Greenish in color, swimming in oil, these little pearls melted in my mouth.

What made the caviar so enjoyable was the team themselves. They took the time to explain each caviar, its region and flavor notes. They may have even provided a sample of classic caviar, used to top their chicken tenders and onion dip.

And that’s what makes Regiis Ova so unique. A playful approach to food elevated by the addition of caviar. You can dine in plush leather seats while listening to jazz, sit at the bar and chat up the servers or relax on the patio and enjoy the evening breeze. There’s something for everyone. Even those who just want a nice glass of wine.
